Pumpkin Chocolate Chip Cookies

You will need:

1 1/2 cups sugar
2 1/2 cups flour
3/4 cup oil 
(I used 1/2 c applesauce, & 1/4 c oil)
- 1 egg
- 1 cup canned pumpkin
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup chocolate chips

1. Line cookie sheet with parchment paper and preheat oven to 400 degrees. 
2. In a large bowl, stir sugar, flour, baking powder, baking soda, salt, cinnamon. 
3. Add canned pumpkin and combine with a mixer.
4. Add egg, oil, applesauce (optional), and vanilla. 
5. Fold in chocolate chips. 
6. Bake 11-13 minutes.
