Yummy Chocolate Muffins!

So I found this recipe for Chocolate Muffins on Pinterest!
And the best part, they are only 2 points on Weight Watchers Points Plus plan! 
On this plan, 2 points is a slice of whole wheat bread.
So let's just say, I was pretty excited.
But the Husband and I were pretty curious to see if these even tasted good.
So we had to try it!

It only needs three ingredients:
  • 1 Box of Sugar Free Chocolate Cake Mix
  • 1 Can of Pumpkin Puree 
  • 6 Ounces of Chocolate Chips
Makes 24 Cupcakes

1. Preheat oven 350 degrees Fahrenheit
2. Mix together cake mix and pumpkin puree.
We don't have a mixer, we keep meaning to get one.. but we haven't. 
So we used our Ninja Blender instead!
We mixed this a little bit, but the attachment kept stopping because we put too much in.
We took half out, and then continued! 

3. Add in 6 ounces of chocolate chips 

4. Line muffin/cupcake pan with cupcake liners
5. Bake 20-22 minutes
or until an inserted toothpick (or fork, if you can't find your toothpicks) comes out clean!

They are by no means the prettiest,
but they were super yummy! 
You can taste the pumpkin a little bit, but it's mostly chocolate.

Things to buy before we try this again:
ice cream scoop
mixer 

But we will definitely make these again!
When we find a house to lease, I plan on making a huge batch and freezing them.
Such a great breakfast item to have on hand.

Update:
We did make these again! 
We put in a little cake mix, and pumpkin in at a time,
and our little Ninja Blender worked perfectly! 
I also bought an ice cream scoop, and it helped so much! 
Last time I put too little in each cupcake, this time, I put too much.
So third time will be a charm!

  1. We made these too on The PinterTest Kitchen, and I thought they were super yummy! The only problem I had was that they stuck to the paper a little. But it's a small price to pay for the taste - and they definitely freeze really well.
